Spinach Artichoke Grilled Cheese Sandwich

Ingredients

The filling

  • 4 oz chopped fresh spinach
  • 1 cup canned quartered artichoke hearts
  • 2 cloves garlic
  • 2 Tbsp butter
  • to taste salt
  • 2 Tbsp sour cream
  • 1 1/3 cups shredded provolone cheese
  • 1/4 cup finely shredded parmesan cheese

The bread

  • 6 slices fresh hearty bread

Instructions

  1. Heat 1 tsp of butter in a skillet and sauté minced garlic until golden, then add spinach and artichokes, seasoning with salt.
  2. Remove excess moisture from the spinach and artichoke mixture by wrapping it in paper towels and squeezing.
  3. Butter the outside of all bread slices, then layer half the cheese on the non-buttered side of 3 slices, followed by the spinach artichoke mixture, sour cream, and remaining cheese, topping with the other slices of bread.
  4. Cook the sandwiches in a clean skillet over medium-low heat, covering to cook until golden brown on one side, then flip and repeat until both sides are golden.
  5. Serve immediately.
