Spinach Artichoke Grilled Cheese Sandwich

The bread

Instructions
- Heat 1 tsp of butter in a skillet and sauté minced garlic until golden, then add spinach and artichokes, seasoning with salt.
- Remove excess moisture from the spinach and artichoke mixture by wrapping it in paper towels and squeezing.
- Butter the outside of all bread slices, then layer half the cheese on the non-buttered side of 3 slices, followed by the spinach artichoke mixture, sour cream, and remaining cheese, topping with the other slices of bread.
- Cook the sandwiches in a clean skillet over medium-low heat, covering to cook until golden brown on one side, then flip and repeat until both sides are golden.
- Serve immediately.
