Spinach and Artichoke Melts

Ingredients

The filling

  • ½ tsp. kosher salt
  • 10 oz. baby spinach
  • 14 oz. artichoke hearts (1 can)
  • 1 large garlic clove, finely chopped
  • 2 oz. Parmesan, finely grated (about ½ cup)
  • 2 Tbsp. mayonnaise
  • Juice of ½ lemon
  • Dash or 2 hot sauce
  • to taste Freshly ground black pepper
  • 2 oz. chilled cream cheese, cut into ½" pieces

The bread

  • 4 slices country-style bread (such as sourdough)
  • to drizzle Extra-virgin olive oil
  • 6 slices provolone cheese

Instructions

  1. Preheat the broiler and simmer water with salt in a skillet.
  2. Add spinach gradually, cooking until wilted, then drain and cool.
  3. Chop artichoke hearts and spinach, and mix with garlic, Parmesan, mayonnaise, lemon juice, hot sauce, and salt.
  4. Toast bread slices under the broiler until lightly browned, then drizzle with oil and top with the spinach mixture.
  5. Place provolone cheese on top and broil until melted and browned.
