Spinach & Artichoke Grilled Cheese

The bread and butter

Instructions
- Mist a small skillet with cooking spray and heat over medium.
- Add spinach and cook for about a minute, then add minced garlic and cook until spinach is wilted.
- In a mixing bowl, combine spinach & garlic with cream cheese, sour cream, Parmesan, ¼ cup of Mozzarella, artichokes, black pepper, and red pepper flakes. Stir until combined.
- Butter one side of each slice of bread with ½ tablespoon of butter.
- Place two slices of bread butter side down in the skillet, sprinkle with 2 tablespoons of shredded Mozzarella each.
- Spread the spinach & artichoke dip over the Mozzarella layer on each slice.
- Top with the remaining Mozzarella (2 tablespoons each) and place the reserved slices of bread on top, butter side up.
- Cook for about 2 ½-3 minutes until golden on the bottom, then carefully flip and cook for another 2-3 minutes until golden on both sides.
