Spinach & Artichoke Grilled Cheese

Ingredients

The filling

  • 1 cup semi-packed baby spinach, torn into pieces
  • 1 clove garlic, minced
  • 2 oz 1/3 less fat cream cheese, softened
  • 1 tablespoon fat free sour cream
  • 1 teaspoon grated Parmesan cheese
  • ¾ cup 2% shredded Mozzarella, divided
  • 3 tablespoons diced canned artichoke hearts, packed in water
  • a pinch black pepper
  • a pinch crushed red pepper flakes

The bread and butter

  • 2 tablespoons light butter
  • 4 slices light wheat bread

Instructions

  1. Mist a small skillet with cooking spray and heat over medium.
  2. Add spinach and cook for about a minute, then add minced garlic and cook until spinach is wilted.
  3. In a mixing bowl, combine spinach & garlic with cream cheese, sour cream, Parmesan, ¼ cup of Mozzarella, artichokes, black pepper, and red pepper flakes. Stir until combined.
  4. Butter one side of each slice of bread with ½ tablespoon of butter.
  5. Place two slices of bread butter side down in the skillet, sprinkle with 2 tablespoons of shredded Mozzarella each.
  6. Spread the spinach & artichoke dip over the Mozzarella layer on each slice.
  7. Top with the remaining Mozzarella (2 tablespoons each) and place the reserved slices of bread on top, butter side up.
  8. Cook for about 2 ½-3 minutes until golden on the bottom, then carefully flip and cook for another 2-3 minutes until golden on both sides.
