Spinach & Artichoke Dip Grilled Cheese

Ingredients

The filling

  • 1 teaspoon olive oil
  • 1 cup fresh baby spinach, packed
  • ΒΌ cup jarred artichokes, chopped
  • 1 clove garlic, peeled and minced
  • to taste crushed red pepper
  • to taste Worcestershire sauce
  • to taste salt
  • 2 ounces softened cream cheese
  • 3 tablespoons finely shredded parmesan

The bread

  • 1 cup finely shredded mozzarella
  • 4 slices brioche, sourdough or plain white bread

For cooking

  • 1 tablespoon butter

Instructions

  1. Heat olive oil in a medium saucepan over medium heat and add spinach, cooking until wilted.
  2. Stir in artichokes, garlic, crushed red pepper, Worcestershire sauce, and salt, cooking for 1 to 2 minutes until warm.
  3. Transfer the mixture to a bowl and set aside.
  4. In a small bowl, combine cream cheese, Worcestershire sauce, crushed red pepper, and parmesan.
  5. Spread the cream mixture on one slice of bread, add mozzarella, followed by the spinach and artichoke mixture, and top with another slice of bread.
  6. Repeat to assemble the second sandwich.
  7. Melt butter in a medium saucepan and cook the first sandwich for 1 to 2 minutes, covering it.
  8. Flip the sandwich and cook for an additional minute until the cheese is melted.
  9. Repeat the cooking process with the second sandwich.
