Instructions
- Season all sides of the steak with salt and pepper, then refrigerate on a wire rack for up to three days.
- Allow the steak to sit at room temperature for an hour and brush with avocado oil.
- Preheat one side of the grill to medium-high heat and the other side to low.
- Cook the steak on the cooler side until it reaches 115°F for medium rare or 125°F for medium, flipping every 5 minutes.
- Sear the steak on the hot side until the crust is charred and the internal temperature reaches 125°F, flipping every minute.
- Let the steak rest for 10 minutes before serving.
