Cowboy Ribeye Steak

Ingredients

The steak

  • 2 to 3 pounds cowboy steak

The seasoning

  • 2 teaspoons sea salt
  • 1 teaspoon fresh cracked peppercorns
  • 1 tablespoon avocado oil

Instructions

  1. Season all sides of the steak with salt and pepper, then refrigerate on a wire rack for up to three days.
  2. Allow the steak to sit at room temperature for an hour and brush with avocado oil.
  3. Preheat one side of the grill to medium-high heat and the other side to low.
  4. Cook the steak on the cooler side until it reaches 115°F for medium rare or 125°F for medium, flipping every 5 minutes.
  5. Sear the steak on the hot side until the crust is charred and the internal temperature reaches 125°F, flipping every minute.
  6. Let the steak rest for 10 minutes before serving.
