Ingredients

  • 2 pieces grass fed rib eye steaks
  • to taste salt

Instructions

  1. Salt the steaks at least 30 minutes before cooking, or up to 2 days in advance.
  2. Remove the steaks from the fridge 45 minutes to an hour before cooking to bring them to room temperature.
  3. If the steaks are thicker than 1 inch, consider cooking them sous vide before searing.
  4. For steaks less than 1 inch thick, sear them on a hot greased grill or grill pan for 2-3 minutes on each side.
  5. To prevent curling, snip the edges of the steaks with scissors.
  6. Aim for an internal temperature of 125°F for medium rare.
  7. Let the steaks rest for at least 10 minutes before serving.
