Ingredients

The steaks

  • 2 pieces grass fed rib steaks

The seasoning

  • to taste Diamond Crystal kosher salt
  • to taste Freshly ground black pepper
  • to taste Aleppo pepper finishing salt

Instructions

  1. Dry the steaks and season them generously with salt and pepper.
  2. Vacuum seal the seasoned steaks and refrigerate for a few hours.
  3. Preheat the SousVide Supreme to 130°F for medium rare.
  4. Once preheated, submerge the steaks and cook for 7 hours.
  5. After cooking, remove the steaks from the bags and dry them off.
  6. Use a kitchen torch to char the exterior of the steaks.
  7. Finish with a sprinkle of Aleppo pepper finishing salt before serving.
