Ingredients

The steak

  • 4 pieces rib eye steaks (10-12 ounces each)
  • tablespoons neutral flavored oil (such as safflower, canola, grapeseed, or peanut oil)
  • to taste kosher salt
  • to taste freshly ground pepper

The garlic butter

  • 4 tablespoons butter
  • 4 cloves garlic (smashed)
  • 4 sprigs fresh rosemary

Instructions

  1. Let the steaks sit at room temperature for 20 minutes.
  2. Season the steaks on both sides with salt and pepper.
  3. Heat a heavy pan over high heat and add the oil.
  4. Place the steaks in the pan in a single layer and cook for 4-5 minutes per side until golden brown.
  5. Add the butter to the pan and let it melt, then add the garlic and rosemary.
  6. Spoon the butter mixture over the steaks.
  7. Use a thermometer to check the internal temperature, cooking until it reaches between 130-135 degrees F for medium.
  8. Remove the steaks from the pan and let them rest for 5 minutes before slicing and serving.
