Ingredients

The seasoning

  • 1 tablespoon mixed peppercorns
  • 2 tablespoons fresh rosemary, chopped fine
  • 1 ½ teaspoons sea salt
  • 1 teaspoon ground coriander

The steak

  • 2 pounds boneless rib eye steak, about 1 ½ inches thick

Instructions

  1. Crush the peppercorns in a zip-top bag using a rolling pin.
  2. Mix the crushed peppercorns, rosemary, salt, and coriander in a small bowl.
  3. Pat the steaks dry with paper towels and season them with the spice mixture, allowing them to sit at room temperature for an hour or proceed to cooking immediately.
  4. Preheat the griddle to medium heat and oil it generously.
  5. Cook the steaks on the griddle, flipping every 2 minutes, for about 10 to 12 minutes or until the internal temperature reaches 125°F.
  6. Transfer the cooked steaks to a platter, tent with foil, and let them rest for 5 minutes before serving.
