The steak

Instructions
- Crush the peppercorns in a zip-top bag using a rolling pin.
- Mix the crushed peppercorns, rosemary, salt, and coriander in a small bowl.
- Pat the steaks dry with paper towels and season them with the spice mixture, allowing them to sit at room temperature for an hour or proceed to cooking immediately.
- Preheat the griddle to medium heat and oil it generously.
- Cook the steaks on the griddle, flipping every 2 minutes, for about 10 to 12 minutes or until the internal temperature reaches 125°F.
- Transfer the cooked steaks to a platter, tent with foil, and let them rest for 5 minutes before serving.
