Instructions
- Combine the red bell pepper, white onion, garlic, basil, red wine vinegar, olive oil, crushed red pepper flakes, 1 Tbsp. honey, and kosher salt in a bowl and season to taste.
- Pat the rib-eye steaks dry and season generously with kosher salt and black pepper.
- Mix mayonnaise, a pinch of kosher salt, black pepper, and the remaining honey in a small bowl.
- Prepare the grill for high indirect heat and oil the grate. Grill the steaks over direct heat, turning frequently for 6–8 minutes until browned.
- Move the steaks to indirect heat, brush with the mayonnaise mixture, and continue grilling while turning until the internal temperature reaches 125° for medium-rare, about 15–18 minutes.
- Let the steaks rest for 15–30 minutes, then slice and serve with the bell pepper mixture and basil leaves.
