Honey-Glazed Rib-Eye Steaks

Ingredients

Vegetable Mixture

  • ½ small red bell pepper
  • ½ small white onion
  • 3 cloves garlic
  • cup finely chopped basil
  • ¼ cup red wine vinegar
  • 3 Tbsp. extra-virgin olive oil
  • 1 tsp. crushed red pepper flakes
  • 4 Tbsp. honey
  • ½ tsp. kosher salt
  • ¼ tsp. kosher salt

Steaks

  • 2 1½"-thick bone-in rib-eye steaks (1–1½ lb. each)
  • ¼ tsp. freshly ground pepper
  • ½ cup mayonnaise
  • Vegetable oil (for grill)
  • Flaky sea salt

Instructions

  1. Combine the red bell pepper, white onion, garlic, basil, red wine vinegar, olive oil, crushed red pepper flakes, 1 Tbsp. honey, and kosher salt in a bowl and season to taste.
  2. Pat the rib-eye steaks dry and season generously with kosher salt and black pepper.
  3. Mix mayonnaise, a pinch of kosher salt, black pepper, and the remaining honey in a small bowl.
  4. Prepare the grill for high indirect heat and oil the grate. Grill the steaks over direct heat, turning frequently for 6–8 minutes until browned.
  5. Move the steaks to indirect heat, brush with the mayonnaise mixture, and continue grilling while turning until the internal temperature reaches 125° for medium-rare, about 15–18 minutes.
  6. Let the steaks rest for 15–30 minutes, then slice and serve with the bell pepper mixture and basil leaves.
