Grilled Ribeye Steak

The steak

bone ribeye steaks (about 1 ½ inches thick)
The seasoning

brown sugar

Montreal steak seasoning

smoked paprika

teaspoon
turmeric

teaspoon
chili powder (optional)

For grilling
Instructions
- Let the steaks reach room temperature for about 30 minutes.
- Trim excess fat and slash the thin piece of fat around the steak.
- Apply the steak house seasoning blend liberally on both sides of the steak.
- Light a chimney full of charcoal and wait until covered with gray ash.
- Arrange the coals on one side of the grill and preheat for 5 minutes.
- Clean and oil the grilling grate.
- Sear the steak directly above the coals for 2-3 minutes on each side.
- If not finished, move the steak to the cooler side of the grill and close the lid.
- Check the steak's internal temperature using a meat thermometer.
- Remove the steak from the grill and let it rest under foil for 5 minutes.
