Grilled Ribeye Steak

Ingredients

The steak

  • 2 pieces bone ribeye steaks (about 1 ½ inches thick)

The seasoning

  • 1 tablespoon brown sugar
  • 2 tablespoons Montreal steak seasoning
  • 1 teaspoon smoked paprika
  • ½ teaspoon turmeric
  • ½ teaspoon chili powder (optional)
  • to taste none salt and black pepper

For grilling

  • to coat none oil

Instructions

  1. Let the steaks reach room temperature for about 30 minutes.
  2. Trim excess fat and slash the thin piece of fat around the steak.
  3. Apply the steak house seasoning blend liberally on both sides of the steak.
  4. Light a chimney full of charcoal and wait until covered with gray ash.
  5. Arrange the coals on one side of the grill and preheat for 5 minutes.
  6. Clean and oil the grilling grate.
  7. Sear the steak directly above the coals for 2-3 minutes on each side.
  8. If not finished, move the steak to the cooler side of the grill and close the lid.
  9. Check the steak's internal temperature using a meat thermometer.
  10. Remove the steak from the grill and let it rest under foil for 5 minutes.
