Ingredients

For the muffins

  • 1 ½ cups unsweetened vanilla almond milk
  • 2 tbsp lemon juice
  • 1 ½ cups whole wheat flour
  • 1 cup all purpose flour
  • 2 tbsp poppy seeds
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp fine sea salt
  • 2 tbsp lemon zest
  • cup avocado oil
  • cup honey or pure maple syrup
  • 1 tsp vanilla extract

For the glaze

  • ½ cup powdered sugar
  • 1 tbsp lemon juice
  • ½ tsp vanilla extract

Instructions

  1. Preheat the oven to 425°F and grease a muffin tin.
  2. Mix almond milk with lemon juice and set aside.
  3. In a bowl, whisk together the flours, poppy seeds, baking powder, baking soda, and salt.
  4. Add lemon zest to the dry ingredients and mix well.
  5. Combine oil, honey or maple syrup, and vanilla with the almond milk mixture, then pour into the dry ingredients and stir until just combined.
  6. Scoop the batter into the muffin tin, filling each cup to the top.
  7. Bake for 5 minutes at 425°F, then reduce the temperature to 350°F and bake for an additional 12 minutes.
  8. Cool muffins in the tin for 10 minutes before transferring to a wire rack.
  9. Prepare the glaze by whisking together powdered sugar and lemon juice, then drizzle over cooled muffins.
