Fluffy Healthy Lemon Poppyseed Muffins

For the glaze

Instructions
- Preheat the oven to 425°F and grease a muffin tin.
- Mix almond milk with lemon juice and set aside.
- In a bowl, whisk together the flours, poppy seeds, baking powder, baking soda, and salt.
- Add lemon zest to the dry ingredients and mix well.
- Combine oil, honey or maple syrup, and vanilla with the almond milk mixture, then pour into the dry ingredients and stir until just combined.
- Scoop the batter into the muffin tin, filling each cup to the top.
- Bake for 5 minutes at 425°F, then reduce the temperature to 350°F and bake for an additional 12 minutes.
- Cool muffins in the tin for 10 minutes before transferring to a wire rack.
- Prepare the glaze by whisking together powdered sugar and lemon juice, then drizzle over cooled muffins.
