Plum Cornmeal Cake

Ingredients

  • cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon ground cinnamon
  • teaspoon salt
  • ½ cup coarse cornmeal
  • 1 tablespoon coarse cornmeal
  • 12 tablespoons unsalted butter
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • cup buttermilk
  • 4-6 pieces ripe plums
  • to taste Turbinado sugar

Instructions

  1. Preheat the oven to 350°F and grease a 9-inch springform pan.
  2. Sift together the flour, baking powder, cinnamon, and salt in a large bowl, then whisk in ½ cup of cornmeal.
  3. In a stand mixer, beat the butter and sugar until light and fluffy, then add eggs one at a time, mixing well after each addition, followed by the vanilla.
  4. Gradually add the flour mixture and buttermilk, starting and ending with the dry ingredients, mixing until just combined.
  5. Spread half of the batter into the pan, top with half of the plum pieces, add the remaining batter, and finish with the rest of the plums and a sprinkle of cornmeal and turbinado sugar.
  6. Bake for about 50 minutes until a tester comes out clean, then cool for 15 minutes before removing from the pan.
