Ingredients

The cake

  • cups gluten free flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 units eggs
  • ¾ cup coconut sugar
  • ½ cup melted coconut oil
  • ¼ cup coconut milk

The fruit topping

  • 3 medium plums

Instructions

  1. Preheat the oven to 350°F and grease a 9-inch springform pan.
  2. In a small bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, stir together the eggs, coconut sugar, coconut oil, and coconut milk.
  4. Add the dry ingredients to the wet ingredients and mix to combine.
  5. Transfer the batter to the springform pan in an even layer.
  6. Cut each plum half into about 4 sections and arrange the plum pieces on top of the batter.
  7. Sprinkle the plums with additional coconut sugar if desired.
  8. Line the bottom and sides of the pan’s exterior with aluminum foil.
  9. Bake for 55 to 60 minutes, or until the cake is lightly browned and a toothpick inserted in the center comes out clean.
  10. Cool on a wire rack.
