Ingredients

Brown Butter Pecan Mixture

  • 1 cup chopped pecans

Cake

  • 2 ¼ cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • ¾ teaspoon kosher salt
  • ½ cup neutral oil
  • 1 ½ cups granulated sugar
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • ¾ cup milk

Spiced Cream Cheese Frosting

  • ½ cup unsalted butter
  • 8 ounces cream cheese
  • ½ teaspoon ground cinnamon
  • teaspoon ground cardamom
  • 1 teaspoon pure vanilla extract
  • a pinch kosher salt
  • 3 cups powdered sugar
  • 2 tablespoons heavy cream
  • optional Corgi Chai Cookies

Instructions

  1. Prepare the brown butter mixture by melting butter in a saucepan, then browning it and adding pecans.
  2. Allow the mixture to cool to room temperature.
  3. Preheat the oven to 350°F and grease a 9x13-inch cake pan.
  4. Mix the flour, baking powder, and salt in a bowl.
  5. In a mixer, combine the oil and sugar, then add the cooled pecan mixture, eggs, and vanilla.
  6. Gradually mix in the dry ingredients and milk until smooth.
  7. Pour the batter into the prepared pan and bake for 20-22 minutes, or until a skewer comes out clean.
  8. Let the cake cool in the pan for 10 minutes before transferring to a cooling rack.
  9. For the frosting, beat together butter, cream cheese, spices, and vanilla until smooth.
  10. Gradually add powdered sugar and heavy cream, mixing until fluffy.
  11. Spread the frosting over the cooled cake and decorate as desired.
