Instructions
- Preheat the oven to 325°F (160°C).
- Roast chopped pecans with one tablespoon of butter for 5 minutes until lightly browned.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- Cream together butter and brown sugar, then add egg yolk and vanilla extract.
- Gradually mix in the dry ingredients to form a dough and refrigerate for 1 hour.
- Whisk the egg white until foamy, then stir in pecan halves.
- Divide the dough into 50 pieces, roll into balls, and coat with chopped pecans.
- Top each ball with a pecan half coated in egg white.
- Bake for 12 minutes until golden brown, then cool on a wire rack.
