Ingredients

The cookies

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg, separated
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

The pecans

  • 1 ¾ cups chopped pecans
  • 1 tablespoon unsalted butter, for roasting
  • 1 cup pecan halves

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Roast chopped pecans with one tablespoon of butter for 5 minutes until lightly browned.
  3. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Cream together butter and brown sugar, then add egg yolk and vanilla extract.
  5. Gradually mix in the dry ingredients to form a dough and refrigerate for 1 hour.
  6. Whisk the egg white until foamy, then stir in pecan halves.
  7. Divide the dough into 50 pieces, roll into balls, and coat with chopped pecans.
  8. Top each ball with a pecan half coated in egg white.
  9. Bake for 12 minutes until golden brown, then cool on a wire rack.
