Ingredients

The cookies

  • 2 cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup unsalted butter
  • 1 cup packed light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup pecans

The icing

  • ¾ cup packed light brown sugar
  • ¼ cup half and half
  • 2 Tbsp unsalted butter
  • cups powdered sugar
  • 28 pieces pecan halves

Instructions

  1. Preheat the oven to 350°F and prepare baking sheets.
  2. Whisk together the flour, baking soda, and salt in a medium bowl.
  3. In a stand mixer, cream together the butter and brown sugar, then mix in the egg and vanilla.
  4. Blend the dry ingredients into the butter mixture, then mix in the pecans.
  5. Shape the dough into balls and place them on the baking sheet, spacing them 2 inches apart.
  6. Bake until the tops are slightly under-baked, about 9 minutes.
  7. Cool on the pan for a few minutes before transferring to a wire rack.
  8. For the icing, boil brown sugar, half and half, and butter in a saucepan, stirring constantly.
  9. Remove from heat, stir in powdered sugar, and let cool slightly.
  10. Spread the icing over the cookies and top with a pecan before the icing sets.
