Mini Sweet Potato Pies

Instructions
- Preheat the oven to 350°F.
- Peel, slice, and boil the sweet potatoes for 30 minutes until softened.
- In a large bowl, mash the sweet potatoes using a potato masher.
- Add the melted butter, pure cane syrup, vanilla extract, cinnamon, nutmeg, sugar, brown sugar, eggs, and evaporated milk to the bowl.
- Blend all ingredients until smooth, about 5 minutes.
- Fill the frozen mini pastry shells with the filling.
- Bake for 45 minutes and allow to cool for 15 minutes before serving.
