Ingredients

The filling

  • 3 pieces sweet potatoes, peeled and sliced
  • ½ cup butter, melted
  • ½ cup pure cane syrup
  • 1 tbsp vanilla extract
  • 1 tbsp cinnamon
  • 1 tbsp nutmeg
  • 1 cup sugar
  • 1 cup brown sugar
  • 3 pieces eggs
  • ½ cup evaporated milk

The crust

  • 24 pieces mini pastry shells, frozen

Instructions

  1. Preheat the oven to 350°F.
  2. Peel, slice, and boil the sweet potatoes for 30 minutes until softened.
  3. In a large bowl, mash the sweet potatoes using a potato masher.
  4. Add the melted butter, pure cane syrup, vanilla extract, cinnamon, nutmeg, sugar, brown sugar, eggs, and evaporated milk to the bowl.
  5. Blend all ingredients until smooth, about 5 minutes.
  6. Fill the frozen mini pastry shells with the filling.
  7. Bake for 45 minutes and allow to cool for 15 minutes before serving.
