Ingredients

The salad

  • 16 oz spinach
  • 2 large cooked sweet potatoes, diced
  • 2 cups cooked quinoa
  • 8 oz feta cheese, crumbled
  • 1 cup pomegranate seeds
  • ½ cup pumpkin seeds
  • ½ cup chopped salted almonds
  • ½ red onion diced small

The dressing

  • ¾ cup apple cider
  • 2 tbsp apple cider vinegar
  • 3 tbsp olive oil
  • ½ shallot minced small
  • 2 tbsp Dijon mustard
  • 1 tbsp maple syrup
  • 1 tsp salt
  • ½ tsp pepper

Instructions

  1. Prepare all veggies and salad ingredients by cooking and chopping.
  2. In a glass mixing cup, whisk together all dressing ingredients and set aside.
  3. In a large bowl, combine spinach, sweet potatoes, quinoa, feta, pomegranate seeds, pumpkin seeds, almonds, and red onion.
  4. Pour dressing over the salad and toss gently before serving.
