Ingredients

The cupcakes

  • 1 cup granulated sugar
  • 1 each vanilla bean, seeds scraped
  • 1 ¾ cups cake flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, room temperature
  • 2 large eggs, room temperature
  • cup Greek yogurt or sour cream
  • 1 tablespoon vanilla extract
  • cup whole milk

The frosting

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • ¼ teaspoon salt
  • 1 tablespoon vanilla extract
  • 1 each vanilla bean (optional)
  • 3–4 tablespoons milk or heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a stand mixer, combine granulated sugar and vanilla bean, beating until blended.
  3. Add cake flour, baking powder, baking soda, and salt; mix for 1 minute.
  4. In a separate bowl, whisk together eggs, Greek yogurt, and vanilla extract until smooth.
  5. Add the egg mixture to the flour mixture and mix until just combined.
  6. Slowly add milk and mix until just combined; the batter will be thin.
  7. Fill cupcake liners just over half full and bake for 14 minutes.
  8. Check for doneness with a toothpick; let cool on a rack.
  9. For the frosting, beat softened butter until smooth, then gradually add powdered sugar, salt, and vanilla extract.
  10. Mix in milk until the desired consistency is reached.
