Instructions
- Preheat the oven to 350°F (175°C).
- In a stand mixer, combine granulated sugar and vanilla bean, beating until blended.
- Add cake flour, baking powder, baking soda, and salt; mix for 1 minute.
- In a separate bowl, whisk together eggs, Greek yogurt, and vanilla extract until smooth.
- Add the egg mixture to the flour mixture and mix until just combined.
- Slowly add milk and mix until just combined; the batter will be thin.
- Fill cupcake liners just over half full and bake for 14 minutes.
- Check for doneness with a toothpick; let cool on a rack.
- For the frosting, beat softened butter until smooth, then gradually add powdered sugar, salt, and vanilla extract.
- Mix in milk until the desired consistency is reached.
