Ingredients

The batter

  • 1 and ¾ cups cake flour
  • ¾ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter
  • 1 cup granulated sugar
  • 3 large egg whites
  • 2 teaspoons pure vanilla extract
  • ½ vanilla bean seeds (optional)
  • ½ cup full-fat sour cream
  • ½ cup whole milk

For decorating

  • to taste vanilla buttercream
  • to taste sprinkles

Instructions

  1. Preheat the oven to 350°F (177°C) and line a muffin pan with cupcake liners.
  2. Whisk together the cake flour, baking powder, baking soda, and salt.
  3. Beat the softened butter until creamy, then add sugar and beat until combined.
  4. Incorporate the egg whites, vanilla extract, and optional vanilla bean seeds, mixing until smooth.
  5. Add the sour cream and mix, then gradually add the dry ingredients and milk until just combined.
  6. Spoon the batter into the liners, filling them 2/3 full, and bake for 19-22 minutes.
  7. Allow the cupcakes to cool completely before frosting with vanilla buttercream.
