Instructions
- 1. Prepare the flaxseed meal with water and let it thicken to create a flax egg.
- 2. Preheat the oven to 325°F and line a loaf pan with parchment paper.
- 3. In a large bowl, whisk together the maple syrup and applesauce, then mix in the flax egg, pumpkin puree, almond milk, and vanilla.
- 4. In another bowl, combine the dry ingredients and then mix them into the wet ingredients until just combined.
- 5. Pour the batter into the prepared loaf pan and add any desired toppings.
- 6. Bake for 20 minutes, then cover with foil and continue baking for 50 to 60 minutes until a toothpick comes out clean.
- 7. Let the bread cool in the pan for an hour before transferring to a wire rack to cool completely.
