Ingredients

The batter

  • 2 tablespoons flaxseed meal
  • 5 tablespoons water
  • cup pure maple syrup
  • ¼ cup unsweetened applesauce
  • 1 15-ounce can pumpkin puree
  • ¼ cup unsweetened almond milk
  • 1 teaspoon pure vanilla extract
  • 2 cups white whole wheat flour
  • 1 ½ teaspoons pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt

Optional toppings

  • to taste pumpkin seeds
  • to taste chocolate chips
  • to taste chopped raw walnuts or pecans

Instructions

  1. 1. Prepare the flaxseed meal with water and let it thicken to create a flax egg.
  2. 2. Preheat the oven to 325°F and line a loaf pan with parchment paper.
  3. 3. In a large bowl, whisk together the maple syrup and applesauce, then mix in the flax egg, pumpkin puree, almond milk, and vanilla.
  4. 4. In another bowl, combine the dry ingredients and then mix them into the wet ingredients until just combined.
  5. 5. Pour the batter into the prepared loaf pan and add any desired toppings.
  6. 6. Bake for 20 minutes, then cover with foil and continue baking for 50 to 60 minutes until a toothpick comes out clean.
  7. 7. Let the bread cool in the pan for an hour before transferring to a wire rack to cool completely.
