Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • tsp baking soda
  • ½ tsp salt
  • tsp cinnamon
  • ¾ tsp nutmeg
  • ½ tsp ginger spice
  • 1 cup pumpkin puree
  • cup butter or coconut oil
  • 1 cup brown sugar
  • 2 egg replacements egg replacements
  • 1 tsp vanilla
  • 6 tbsp almond milk

Instructions

  1. Preheat the oven to 350°F and prepare a bread tin with parchment paper and cooking oil spray.
  2. In a large bowl, mix the flours, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, combine the pumpkin puree, melted butter or oil, brown sugar, egg replacements, vanilla, and almond milk, whisking until combined.
  4. Add the dry flour mixture to the wet pumpkin mixture and stir until well combined.
  5. Pour the batter into the prepared baking tin and bake for 50-55 minutes.
  6. Allow to cool for 5 minutes in the tin, then transfer to a wire rack to cool completely before serving.
