Instructions
- Preheat the oven to 350°F and prepare a bread tin with parchment paper and cooking oil spray.
- In a large bowl, mix the flours, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, combine the pumpkin puree, melted butter or oil, brown sugar, egg replacements, vanilla, and almond milk, whisking until combined.
- Add the dry flour mixture to the wet pumpkin mixture and stir until well combined.
- Pour the batter into the prepared baking tin and bake for 50-55 minutes.
- Allow to cool for 5 minutes in the tin, then transfer to a wire rack to cool completely before serving.
