Ingredients

  • 2 ⅓ cups all purpose flour or gluten free flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon fine sea salt
  • 1 teaspoon cinnamon
  • 2 teaspoons pumpkin pie spice
  • 1 cup pumpkin puree
  • 1 cup sugar (coconut sugar, brown sugar or cane sugar)
  • cup coconut oil (melted)
  • ½ cup + 2 tablespoons vegan milk
  • 2 teaspoons vanilla extract
  • ½ cup vegan chocolate chips

Instructions

  1. 1. Preheat the oven to 350°F (180°C) and grease a 9x5 loaf pan.
  2. 2. In a bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and pumpkin pie spice.
  3. 3. In a mixer, combine the sugar, pumpkin puree, and melted coconut oil until partially mixed.
  4. 4. Add the vegan milk and vanilla extract, mixing until fully combined.
  5. 5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  6. 6. Fold in the chocolate chips and pour the batter into the prepared loaf pan.
  7. 7. Bake for 45 to 50 minutes, or until a toothpick comes out clean.
