Instructions
- 1. Preheat the oven to 350°F (180°C) and grease a 9x5 loaf pan.
- 2. In a bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and pumpkin pie spice.
- 3. In a mixer, combine the sugar, pumpkin puree, and melted coconut oil until partially mixed.
- 4. Add the vegan milk and vanilla extract, mixing until fully combined.
- 5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
- 6. Fold in the chocolate chips and pour the batter into the prepared loaf pan.
- 7. Bake for 45 to 50 minutes, or until a toothpick comes out clean.
