Instructions
- Preheat the oven to 350°F and grease a standard loaf pan.
- In a medium bowl, mix together the flour, baking soda, baking powder, salt, cinnamon, and ginger.
- In a large bowl, stir together the eggs, maple syrup, coconut oil, and pumpkin puree.
- Add the dry ingredients to the wet ingredients and stir to just combine.
- Stir in the chocolate chips.
- Bake for 55 to 60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool on a wire rack before removing the bread from the pan.
