Ingredients

  • 2 cups gluten free flour
  • 1 tsp baking soda
  • ¼ tsp baking powder
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp ginger
  • 2 large eggs
  • cup pure maple syrup
  • cup melted coconut oil
  • 1 ½ cups pumpkin puree
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and grease a standard loaf pan.
  2. In a medium bowl, mix together the flour, baking soda, baking powder, salt, cinnamon, and ginger.
  3. In a large bowl, stir together the eggs, maple syrup, coconut oil, and pumpkin puree.
  4. Add the dry ingredients to the wet ingredients and stir to just combine.
  5. Stir in the chocolate chips.
  6. Bake for 55 to 60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool on a wire rack before removing the bread from the pan.
