Ingredients

  • 2 ½ cups gluten-free flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp salt
  • 2 large eggs
  • ¼ cup mashed banana
  • ¾ cup maple syrup
  • cup melted coconut oil
  • 1 cup pumpkin puree
  • 1 tsp vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350 degrees.
  2. Sift together the flour, baking powder, baking soda, cinnamon, and salt in a medium bowl.
  3. In a stand mixer, combine the eggs, banana, maple syrup, coconut oil, pumpkin puree, and vanilla extract.
  4. Add the dry ingredients to the wet ingredients and mix until combined.
  5. Stir in the chocolate chips.
  6. Drop heaping tablespoons of dough onto a cookie sheet.
  7. Bake for 10-12 minutes until the cookies begin to brown.
  8. Cool on a wire rack.
