Instructions
- Cream together the coconut oil and sugar until light and fluffy.
- Mix in the flour, baking powder, baking soda, pumpkin spice, cinnamon, and sea salt until well combined.
- Add the vanilla extract and pumpkin purée, mixing until fully incorporated.
- Chill the dough in the refrigerator for at least 2 hours.
- Preheat the oven to 350°F and scoop out dough to form balls, placing them on a lined baking sheet.
- Refrigerate the dough balls for 10 minutes before baking.
- Bake for 12 to 15 minutes, then cool for 10 minutes before serving.
