Ingredients

The dough

  • ½ cup pumpkin puree
  • 1 cup light brown sugar
  • ½ cup melted coconut oil
  • ½ teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

The mix-ins

  • ½ cup vegan chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, mix together melted coconut oil and brown sugar until combined, then add pumpkin puree and vanilla extract.
  3. Add the dry ingredients (flour, baking soda, pumpkin pie spice, and salt) to the wet mixture and mix until a dough forms.
  4. Fold in the chocolate chips.
  5. Scoop out about 2 tablespoons of dough for each cookie, roll into balls, and flatten slightly.
  6. Place cookies on the baking sheet, leaving space between them, and bake for 12-14 minutes.
  7. Allow cookies to cool on the baking sheet for 2 minutes before transferring to a cooling rack.
