Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a medium bowl, mix together melted coconut oil and brown sugar until combined, then add pumpkin puree and vanilla extract.
- Add the dry ingredients (flour, baking soda, pumpkin pie spice, and salt) to the wet mixture and mix until a dough forms.
- Fold in the chocolate chips.
- Scoop out about 2 tablespoons of dough for each cookie, roll into balls, and flatten slightly.
- Place cookies on the baking sheet, leaving space between them, and bake for 12-14 minutes.
- Allow cookies to cool on the baking sheet for 2 minutes before transferring to a cooling rack.
