Instructions
- Preheat the oven to 350°F and prepare a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, salt, baking soda, baking powder, and spices.
- In a separate bowl, mix the coconut oil and sugars together, then add the vanilla and pumpkin, mixing until combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the chocolate chips.
- Drop large rounded tablespoons of dough onto the prepared baking sheet.
- Bake for 10-12 minutes until the edges are lightly browned.
- Let the cookies cool on the baking sheet for 2 minutes before transferring to a wire rack to cool completely.
