Ingredients

  • cups white whole wheat flour
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ¾ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • teaspoon ground ginger
  • teaspoon ground cloves
  • ¼ cup coconut oil, melted and cooled
  • ¼ cup brown sugar
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¾ cup pumpkin puree
  • ¾ cup vegan chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, salt, baking soda, baking powder, and spices.
  3. In a separate bowl, mix the coconut oil and sugars together, then add the vanilla and pumpkin, mixing until combined.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Fold in the chocolate chips.
  6. Drop large rounded tablespoons of dough onto the prepared baking sheet.
  7. Bake for 10-12 minutes until the edges are lightly browned.
  8. Let the cookies cool on the baking sheet for 2 minutes before transferring to a wire rack to cool completely.
