Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Combine the flour, sugar, pumpkin pie spice, baking powder, and sea salt in a large mixing bowl.
- Add the pumpkin puree, coconut oil, chia egg, and vanilla extract to the dry ingredients and mix well.
- Stir in the chocolate chips.
- Drop spoonfuls of the batter onto the baking sheet to form about 14 cookies.
- Bake for 20-25 minutes until the cookies are golden brown.
- Let the cookies cool for 10 minutes before serving.
