Ingredients

  • 2 cups all-purpose flour
  • 1/3 cup brown sugar
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon sea salt
  • 1/2 cup pumpkin puree
  • 1/3 cup coconut oil
  • 1 each flax or chia egg
  • 1 teaspoon vanilla extract
  • 1/4 to 1/3 cup unsweetened almond milk
  • 1/3 cup dairy-free chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Combine the flour, sugar, pumpkin pie spice, baking powder, and sea salt in a large mixing bowl.
  3. Add the pumpkin puree, coconut oil, chia egg, and vanilla extract to the dry ingredients and mix well.
  4. Stir in the chocolate chips.
  5. Drop spoonfuls of the batter onto the baking sheet to form about 14 cookies.
  6. Bake for 20-25 minutes until the cookies are golden brown.
  7. Let the cookies cool for 10 minutes before serving.
