Instructions
- Preheat the oven to 350°F (175°C).
- Optionally, strain the pumpkin purée to remove excess moisture.
- In a bowl, whisk together the almond flour, oat flour, baking soda, pumpkin spice, and sea salt.
- Make a well in the center and add the maple syrup, pumpkin purée, and vanilla extract.
- Mix everything until well combined.
- Fold in the vegan chocolate chips.
- Spoon the mixture onto a parchment-lined baking sheet.
- Bake for 18-20 minutes until golden on the edges.
