Brown Butter Lobster Pasta

Ingredients

  • 4 slices thick cut bacon
  • 4-8 ounces lobster tails
  • 6 tablespoons butter
  • 2 cloves garlic
  • 1 bunch kale
  • 2 tablespoons olive oil
  • 2 tablespoons parmesan cheese
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon crushed red pepper
  • 1 pound angel hair pasta
  • ½ lemon juiced
  • 1 pint grape tomatoes
  • 6-7 ounces fontina cheese
  • ¼ cup fresh basil or parsley

Instructions

  1. Preheat the oven and prepare the kale with olive oil, parmesan, salt, and pepper, then bake until crispy.
  2. Cook the pasta according to package instructions.
  3. Cook the bacon until crispy, then crumble and set aside, leaving some fat in the pan.
  4. Prepare the lobster tails by cutting them in half and seasoning them.
  5. Sear the lobster tails in the skillet until the shells turn bright red, then set aside.
  6. In the same skillet, add butter, garlic, and the cooked pasta along with spices, then toss with tomatoes and fontina cheese.
  7. Drizzle with lemon juice and mix in the crispy kale.
  8. In a separate pan, brown the remaining butter, then add the lobster meat to the pasta and serve topped with basil and bacon.
