Lobster Pasta

Ingredients

The pasta

  • 1 pound pasta of choice

The sauce

  • 1 tablespoon oil
  • ½ pint cherry tomatoes
  • 1 shallot shallot or ¼ yellow onion
  • 4 cloves garlic
  • ½ teaspoon dried oregano
  • ¼ teaspoon crushed red pepper
  • ½ cup white or rosé wine
  • ½ cup reserved pasta water
  • ¼ cup unsalted butter
  • 1 tablespoon Italian parsley

The lobster

  • 2 tails lobster tails

Seasoning

  • to taste kosher salt

Instructions

  1. Boil salted water and cook the lobster tails for 4-5 minutes until cooked through, then cool and chop the meat.
  2. In the same pot, cook the pasta until al dente, reserving some pasta water before draining.
  3. In a skillet, heat oil and blister the cherry tomatoes, then add shallot, garlic, oregano, crushed red pepper, and salt.
  4. Deglaze the pan with wine and reserved pasta water, simmer for 5-7 minutes, then add butter until melted.
  5. Toss the pasta with the sauce, then gently mix in the lobster meat and serve garnished with parsley.
