Ingredients

The base

  • 4 tablespoons butter
  • 2 tablespoons flour
  • cups water
  • 4 cups milk
  • 1 pound corkscrew pasta
  • ¾ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ¼ teaspoon pepper

The cheese and lobster

  • 4 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • cups chopped cooked lobster meat

The topping

  • ½ cup panko breadcrumbs
  • 2 tablespoons chives
  • 1 spray cooking spray

Instructions

  1. Preheat the oven to 350°F and coat a baking dish with cooking spray.
  2. Melt 2 tablespoons of butter in a pot and whisk in the flour for about 30 seconds.
  3. Add water and whisk until smooth, then add milk and combine.
  4. Stir in pasta and seasonings, bringing to a simmer.
  5. Cook for 10-12 minutes until the pasta is done, stirring occasionally.
  6. Reduce heat and stir in the cheeses until the sauce is smooth.
  7. Fold in the lobster meat and transfer to the baking dish.
  8. Melt the remaining butter and mix with panko breadcrumbs, then sprinkle over the pasta.
  9. Bake for 10-15 minutes until the topping is golden brown.
  10. Garnish with chives and additional lobster if desired, then serve.
