Ingredients

The pasta

  • 1 lb elbow macaroni or your favorite pasta

The sauce

  • 4 tablespoons butter
  • 4 tablespoons flour
  • 2 cups milk
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 16 oz sharp cheddar cheese, shredded or cheese of your choice
  • ¼ teaspoon nutmeg (optional)

The lobster

  • 1 lb cooked lobster meat, body and claw

The topping

  • ½ cup Italian bread crumbs

Instructions

  1. Preheat the oven to 350°F and grease an 8" x 8" baking dish.
  2. Boil the elbow macaroni for 7 minutes or until al dente, then drain and set aside.
  3. Cut the cooked lobster meat into manageable pieces.
  4. Heat the milk in a saucepan until hot, but do not boil.
  5. In a heavy saucepan, melt the butter and add the flour, whisking until combined.
  6. Gradually add the heated milk while whisking constantly until the mixture is smooth and creamy.
  7. Add the shredded cheese and mix until fully incorporated.
  8. Stir in the salt, pepper, and nutmeg, mixing well.
  9. Layer the cooked macaroni in the baking dish, covering it with cheese sauce.
  10. Add a layer of lobster pieces, then another layer of macaroni.
  11. Top with remaining cheese sauce and sprinkle with bread crumbs.
  12. Bake at 350°F for 25 minutes, then broil for the last 5 minutes to add color.
  13. Remove from the oven and serve immediately.
