Lobster Mac and Cheese

The lobster
-

cooked lobster meat
Instructions
- Boil water in a large pot to cook the lobster.
- Add the lobsters to the boiling water and cook for about 7-8 minutes.
- Drain and shock the lobsters under cold water, then extract the meat.
- Cook the macaroni according to package instructions and drain.
- In a skillet, melt butter and whisk in flour to create a roux.
- Slowly add evaporated milk and half and half, stirring to avoid lumps.
- Add the seasonings and simmer until the mixture thickens slightly.
- Stir in the cheeses until melted and smooth, adjusting salt and pepper to taste.
- Combine the pasta and lobster with the cheese sauce, then transfer to a baking dish.
- Top with remaining cheese and bake at 375°F for about 20 minutes until golden and bubbly.
