Ingredients

The pasta

  • 8 ounces uncooked macaroni

The cheese sauce

  • 3 tablespoons unsalted butter
  • 2 tablespoons flour
  • 1 12-ounce can evaporated milk
  • ¾ cup half and half
  • ½-1 tablespoon onion powder
  • 2 teaspoons garlic powder
  • ½-1 teaspoon Creole seasoning
  • ¼ teaspoon cayenne pepper
  • ½ cup mozzarella cheese, grated
  • ½ cup sharp cheddar cheese, grated
  • ½ cup jack cheese
  • to taste salt and pepper

The lobster

  • ½ pound cooked lobster meat

Instructions

  1. Boil water in a large pot to cook the lobster.
  2. Add the lobsters to the boiling water and cook for about 7-8 minutes.
  3. Drain and shock the lobsters under cold water, then extract the meat.
  4. Cook the macaroni according to package instructions and drain.
  5. In a skillet, melt butter and whisk in flour to create a roux.
  6. Slowly add evaporated milk and half and half, stirring to avoid lumps.
  7. Add the seasonings and simmer until the mixture thickens slightly.
  8. Stir in the cheeses until melted and smooth, adjusting salt and pepper to taste.
  9. Combine the pasta and lobster with the cheese sauce, then transfer to a baking dish.
  10. Top with remaining cheese and bake at 375°F for about 20 minutes until golden and bubbly.
