Sweet Potato Quesadillas
Ingredients
The filling

The quesadillas

grated sharp cheddar cheese or Monterey Jack

tortillas (8 to 10 inch)

Instructions
- Sauté onions and garlic in oil until translucent, then add grated sweet potatoes and spices, cooking covered for about 8-10 minutes.
- Once sweet potatoes are tender, season with salt and pepper, add cilantro and lime juice, then remove from heat.
- To bake, spread filling and cheese on each tortilla and bake at 350ºF for about 15 minutes until cheese is melted.
- For stovetop cooking, fill tortillas with filling and cheese, fold, and cook in oil until golden on both sides.
- Serve with lime, sour cream, and optional salsa.
