Sweet Potato Quesadillas

Ingredients

The filling

  • cups finely chopped onion
  • 2 cloves garlic, minced
  • 3 to 4 tablespoons neutral oil (such as olive, grapeseed, or canola)
  • 4 cups grated peeled sweet potato
  • 1 teaspoon chili powder
  • 1 to 2 teaspoons ground cumin
  • a generous pinch cayenne
  • to taste salt and ground black pepper
  • 1 cup finely minced cilantro (optional)
  • to taste fresh lime juice

The quesadillas

  • 1 cup grated sharp cheddar cheese or Monterey Jack
  • 8 pieces tortillas (8 to 10 inch)
  • to serve sour cream

Instructions

  1. Sauté onions and garlic in oil until translucent, then add grated sweet potatoes and spices, cooking covered for about 8-10 minutes.
  2. Once sweet potatoes are tender, season with salt and pepper, add cilantro and lime juice, then remove from heat.
  3. To bake, spread filling and cheese on each tortilla and bake at 350ºF for about 15 minutes until cheese is melted.
  4. For stovetop cooking, fill tortillas with filling and cheese, fold, and cook in oil until golden on both sides.
  5. Serve with lime, sour cream, and optional salsa.
