Ingredients

The filling

  • 1 large orange sweet potato
  • 15 ounce can black beans
  • ½ teaspoon chipotle chili powder
  • ½ teaspoon cumin
  • ¼ teaspoon garlic powder
  • ¼ teaspoon table salt
  • ½ cup vegetable broth
  • ½ to 1 teaspoon hot sauce (optional)

The assembly

  • 4 12-inch tortillas
  • 1 and ⅓ cup shredded mozzarella cheese
  • 1 medium avocado (sliced for serving)
  • ½ cup salsa (for serving)

Instructions

  1. Preheat the oven to 400°F and roast the sweet potato for 45-55 minutes until tender.
  2. Remove the skin and mash the sweet potato.
  3. Combine the mashed sweet potato, black beans, spices, and vegetable broth in a pot and simmer for 4-5 minutes.
  4. Heat a skillet and place a tortilla in it.
  5. Spread a portion of the filling on one half of the tortilla and add cheese on the other half.
  6. Fold the tortilla and cook until golden, then flip to cook the other side.
  7. Serve with salsa and avocado.
