Sweet Potato Black Bean Quesadillas

Instructions
- Preheat the oven to 400°F and roast the sweet potato for 45-55 minutes until tender.
- Remove the skin and mash the sweet potato.
- Combine the mashed sweet potato, black beans, spices, and vegetable broth in a pot and simmer for 4-5 minutes.
- Heat a skillet and place a tortilla in it.
- Spread a portion of the filling on one half of the tortilla and add cheese on the other half.
- Fold the tortilla and cook until golden, then flip to cook the other side.
- Serve with salsa and avocado.
