Ingredients

The filling

  • 3 small sweet potatoes
  • 1 tablespoon chili powder
  • 1 tablespoon ground cinnamon
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon kosher salt
  • ½ teaspoon ground chipotle chili pepper
  • 2 teaspoons extra virgin olive oil
  • 1 medium yellow onion
  • 1 large green bell pepper
  • 2 cloves garlic
  • 1 can reduced sodium black beans

The tortillas

  • 6 medium-sized 100% whole wheat flour tortillas
  • 1 ¼ cups freshly grated sharp shredded cheddar cheese

Optional toppings

  • to taste light sour cream or plain non-fat Greek yogurt
  • to taste diced avocado
  • to taste salsa
  • to taste chopped fresh cilantro

Instructions

  1. Cut sweet potatoes into chunks, boil until fork-tender, then mash and mix with spices.
  2. Sauté onions, peppers, and garlic until tender.
  3. Combine sautéed vegetables with sweet potato mash and stir in black beans.
  4. Assemble quesadillas with filling and cheese on half of a tortilla, then fold.
  5. Cook in a skillet until both sides are browned and crispy.
  6. Serve with desired toppings.
