Ingredients

Strawberry Cake Ingredients

  • 16 ounces frozen whole strawberries
  • ¾ cup milk
  • 6 large egg whites
  • 2 tsp vanilla extract
  • cups cake flour
  • cups granulated sugar
  • 4 tsp baking powder
  • 1 tsp salt
  • 12 Tbsp unsalted butter

Cream Cheese Frosting Ingredients

  • 2 (8 oz.) bricks cream cheese
  • 1 cup butter
  • 2 tsp vanilla extract
  • 6–8 cups powdered sugar

Topping Ingredients

  • 1 (16 oz.) bag conversation hearts

Instructions

  1. Preheat the oven to 350°F and prepare the cake pans.
  2. Microwave the strawberries until soft, then strain to obtain the juice.
  3. Reduce the strawberry juice over heat until syrupy.
  4. Mix the strawberry juice, milk, egg whites, and vanilla in a bowl.
  5. In a stand mixer, combine flour, sugar, baking powder, and salt, then add butter until crumbly.
  6. Add half of the strawberry mixture and mix until fluffy, then add the remaining mixture.
  7. Divide the batter between the prepared pans and bake until a toothpick comes out clean.
  8. Cool the cakes for 10 minutes in the pans, then remove and cool completely.
  9. Level the cakes and frost between layers and on the outside.
  10. Decorate with conversation hearts and serve.
