Chocolate Chip Snowball Cookies

Ingredients

  • ¾ cup sliced almonds
  • 2 cups all-purpose flour
  • ¼ + ⅛ tsp salt
  • 1 cup unsalted butter
  • cups powdered sugar
  • tsp vanilla extract
  • 1 cup mini chocolate chips

Instructions

  1. Preheat the oven to 375°F.
  2. Grind the sliced almonds in a food processor until finely chopped and set aside.
  3. In a mixing bowl, whisk together the flour and salt, then set aside.
  4. In an electric mixer, cream together the butter and ½ cup of powdered sugar until blended.
  5. Add the vanilla extract and mix well.
  6. Gradually add the flour and salt mixture on low speed until just combined.
  7. Fold in the mini chocolate chips and ground almonds until evenly distributed.
  8. Scoop out 1 tablespoon of dough, roll it into a ball, and place on an ungreased cookie sheet.
  9. Bake for 10-12 minutes until the bottoms are lightly golden.
  10. Let cookies cool for a few minutes, then roll them in the remaining powdered sugar.
  11. Transfer cookies to a wire rack to cool completely and roll in powdered sugar again for a thicker coating.
