Ingredients

The dough

  • cup white whole wheat flour
  • ½ cup powdered sugar
  • 1 cup melted butter or coconut oil
  • ¾ cup ground walnuts (or pecans/almonds)
  • pinch salt
  • 2 tsp vanilla extract
  • ½ tsp almond extract (optional but recommended)

For dusting

  • 1 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Mix together the white whole wheat flour, ½ cup powdered sugar, melted butter or coconut oil, ground walnuts, and a pinch of salt.
  3. Stir in the vanilla and almond extract until combined.
  4. Roll about 2 tablespoons of dough into balls and place them on the baking sheet, pressing down lightly.
  5. Bake for 15-17 minutes until set but not browned.
  6. Let the cookies cool completely before rolling them in the remaining 1 cup of powdered sugar.
