Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Using a hand mixer, cream the butter and ¼ cup powdered sugar until fluffy.
- Add the vanilla and almond extract, mixing to combine.
- Incorporate the flour, salt, and lime zest until fully mixed.
- Switch to a wooden spoon and fold in the pecans.
- Chill the dough in the fridge for about 30 minutes.
- Roll 2 tablespoons of dough into balls and place them on the prepared sheet.
- Bake for 13-15 minutes until the edges are slightly golden.
- Sift the remaining powdered sugar into a bowl.
- Roll the warm cookies in powdered sugar and allow them to cool.
