Ingredients

The dough

  • 1 cup unsalted butter
  • ¼ cup powdered sugar
  • 2 teaspoons vanilla extract
  • ½ teaspoon almond extract (optional)
  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • 2 teaspoons lime zest
  • cups finely chopped pecans

For rolling

  • cups powdered sugar

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Using a hand mixer, cream the butter and ¼ cup powdered sugar until fluffy.
  3. Add the vanilla and almond extract, mixing to combine.
  4. Incorporate the flour, salt, and lime zest until fully mixed.
  5. Switch to a wooden spoon and fold in the pecans.
  6. Chill the dough in the fridge for about 30 minutes.
  7. Roll 2 tablespoons of dough into balls and place them on the prepared sheet.
  8. Bake for 13-15 minutes until the edges are slightly golden.
  9. Sift the remaining powdered sugar into a bowl.
  10. Roll the warm cookies in powdered sugar and allow them to cool.
