Ingredients

  • 1 ½ cups raw pecan halves or pieces
  • 1 cup unsalted butter, softened
  • 2 teaspoons pure vanilla extract
  • 2 ¼ cups unbleached all-purpose flour or gluten-free flour blend
  • cups powdered sugar + more for dusting or rolling
  • ¼ teaspoon fine salt

Instructions

  1. Chop the pecans in a food processor until finely and coarsely chopped.
  2. Cream the butter and vanilla together.
  3. Mix in the flour, powdered sugar, salt, and pecans until a smooth dough forms.
  4. Chill the dough in the refrigerator for 1 hour.
  5. Preheat the oven to 400°F and prepare baking sheets.
  6. Roll the chilled dough into 28-30 balls.
  7. Bake the cookies for 9-12 minutes until set and lightly browned.
  8. Cool the cookies before rolling them in powdered sugar.
