No-Bake Pecan Snowballs

Instructions
- Process the pecans and shredded coconut in a food processor until crumbly.
- Add the remaining ingredients and process until a sticky dough forms.
- Scoop rounded tablespoons of dough and roll into balls.
- Place the balls on a parchment-lined plate or baking sheet.
- Freeze for 1 to 2 hours to set.
- Optionally, roll the balls in additional arrowroot or tapioca starch for a snowball look.
- Store in the fridge for best texture, keeping them in a sealed container.
