Ingredients

The mixture

  • 1 cup pecan halves
  • ½ cup shredded unsweetened coconut
  • 1 cup soft Medjool dates, pitted (about 10 dates)
  • 1 tablespoon coconut oil
  • ½ teaspoon sea salt
  • ½ teaspoon vanilla extract
  • ½ cup arrowroot or tapioca starch

For dusting

  • Extra amount arrowroot or coconut sugar

Instructions

  1. Process the pecans and shredded coconut in a food processor until crumbly.
  2. Add the remaining ingredients and process until a sticky dough forms.
  3. Scoop rounded tablespoons of dough and roll into balls.
  4. Place the balls on a parchment-lined plate or baking sheet.
  5. Freeze for 1 to 2 hours to set.
  6. Optionally, roll the balls in additional arrowroot or tapioca starch for a snowball look.
  7. Store in the fridge for best texture, keeping them in a sealed container.
