Ingredients

  • 3 cups old-fashioned whole rolled oats
  • 3 cups sweetened shredded coconut
  • ½ cup unsalted butter
  • 1 cup granulated sugar
  • ½ cup milk
  • 6 tablespoons unsweetened natural or dutch-process cocoa powder
  • teaspoon salt
  • 1 teaspoon pure vanilla extract

Instructions

  1. Combine oats and 1 cup of shredded coconut in a bowl and set aside.
  2. In a saucepan, melt butter, sugar, milk, cocoa, and salt over medium heat, then bring to a boil for 1 minute.
  3. Remove from heat, stir in vanilla, and pour over the oat mixture, stirring to combine.
  4. Cover and chill the mixture for at least 45 minutes.
  5. Pulse the remaining coconut in a food processor to make it finer.
  6. Line baking sheets with parchment paper.
  7. Roll the chilled mixture into 1 tablespoon balls and coat with the processed coconut.
  8. Refrigerate the balls for 30-60 minutes to set.
