No-Bake Chocolate Coconut Snowballs

Instructions
- Combine oats and 1 cup of shredded coconut in a bowl and set aside.
- In a saucepan, melt butter, sugar, milk, cocoa, and salt over medium heat, then bring to a boil for 1 minute.
- Remove from heat, stir in vanilla, and pour over the oat mixture, stirring to combine.
- Cover and chill the mixture for at least 45 minutes.
- Pulse the remaining coconut in a food processor to make it finer.
- Line baking sheets with parchment paper.
- Roll the chilled mixture into 1 tablespoon balls and coat with the processed coconut.
- Refrigerate the balls for 30-60 minutes to set.
