Instructions
- Blend the shredded coconut in a high-speed blender or food processor until fine.
- Add sugar and coconut milk (and optional vanilla extract) to the blended coconut and mix until a sticky batter forms.
- Transfer the mixture to a bowl, wet your hands, and form the mixture into 1-inch balls.
- Place the balls on a lined baking sheet, press them into cookie shapes, and sprinkle with extra coconut or sugar.
- Refrigerate or freeze until firm.
