Ingredients

The cookie mixture

  • cups blanched almond flour
  • 1 cup unsweetened grated coconut
  • 1 Tbsp coconut sugar
  • 2 pinches sea salt

The wet ingredients

  • ¼ cup full fat coconut milk
  • 2 tsp vanilla extract
  • 30-40 drops liquid stevia

For rolling

  • 2-3 Tbsp extra coconut

Instructions

  1. Combine almond flour, coconut, coconut sugar, and sea salt in a mixing bowl.
  2. In a separate bowl, mix coconut milk, vanilla extract, and stevia.
  3. Pour the wet ingredients into the dry ingredients and mix until combined.
  4. Form the mixture into small balls, about 1 inch in diameter.
  5. Roll the balls in extra coconut.
  6. Enjoy immediately or store in the refrigerator for up to a week.
