Instructions
- Preheat the oven to 375°F.
- In a stand mixer, combine flour, lime zest, sugar, and salt on low speed until mixed.
- Gradually add butter, mixing until the mixture is crumbly.
- Add vanilla and cream cheese, mixing until the dough forms clumps.
- Roll the dough into 1-inch balls and place them on a parchment-lined baking sheet.
- Bake for about 12 minutes until lightly browned and cool to room temperature.
- For the glaze, whisk cream cheese and lime juice until smooth, then mix in powdered sugar.
- Dip the tops of the cookies in the glaze and then in shredded coconut.
- Let the cookies sit until the glaze sets.
