Ingredients

The cookie dough

  • 1 and 1/4 cups sweetened shredded coconut
  • 2 and 1/2 cups all-purpose flour
  • 1 teaspoon cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup unsalted butter
  • 1 and ½ cups granulated sugar
  • 1 large egg
  • ¼ cup lime juice
  • 2 teaspoons lime zest
  • 1 teaspoon coconut extract

The lime glaze

  • 1 cup confectioners’ sugar
  • 2 tablespoons lime juice

Instructions

  1. Pulse the coconut shreds to make them finer for better texture.
  2. Whisk together flour, cornstarch, baking soda, and salt.
  3. Cream butter and 1 cup of sugar, then mix in egg, lime juice, lime zest, and coconut extract.
  4. Add the coconut and dry ingredients, mixing until combined. Chill the dough for at least 1.5 hours.
  5. Preheat the oven and prepare baking sheets.
  6. Roll dough into balls, coat in sugar, and place on baking sheets.
  7. Bake until lightly browned, then cool on a wire rack.
  8. Whisk together glaze ingredients and drizzle over cooled cookies.
