Instructions
- Pulse the coconut shreds to make them finer for better texture.
- Whisk together flour, cornstarch, baking soda, and salt.
- Cream butter and 1 cup of sugar, then mix in egg, lime juice, lime zest, and coconut extract.
- Add the coconut and dry ingredients, mixing until combined. Chill the dough for at least 1.5 hours.
- Preheat the oven and prepare baking sheets.
- Roll dough into balls, coat in sugar, and place on baking sheets.
- Bake until lightly browned, then cool on a wire rack.
- Whisk together glaze ingredients and drizzle over cooled cookies.
